Thai eggplant looks similar to a golf ball with a stem. The color can be medium green, pallid green, or white with green stripes. What makes it unique is the crunchy texture and mild flavor which is why it can be enjoyed raw without removing the skin. Typically, this veggie has a bit of a bitter taste. This bitterness is sometimes stronger when the plant is over-matured.
