Oregano is an herb with multiple branched stems. The leaves are narrow and pinnate, or arrow-shaped with a soft and fuzzy texture. As the plant grows, the more mature stems become woody at the base. Typically, Oregano is harvested just before the flowers bloom, when the flavor and scent is at its peak. Oregano is said to have a balsamic flavor with a combination of mint, thyme, and rosemary. The taste is more on the bitter and strong side.
